A couple of ideas:
USIM Interface
AES Encyption/Decryption Core
IrDA Controller (more or less already implemented in IrDA project but
never tested in real HW, maybe somebody wants to have a look and do a
test bench)
Firewire Controller (started, but project kind of stuck ruight now
AFAIK)
Also some other (more complex) ideas: USB Host/OTG, Gigabit Ethernet
MAC, PCI-X, ...
